This Labor Day dinner was supposed to be simple: smoke chicken quarters and thighs, then finish them with Alabama white sauce. Then I opened the smoker and realized it needed cleaning.

No problem. I figured I would use a smoking tube on the grill instead. Then I discovered the grill had been left on and was out of fuel.

By that point it was already mid-afternoon. There wasn't time to start over, so it was time to back up and punt.

Plan C: The Oven

I seasoned the chicken with Kinder’s The Blend and baked it in the oven. Toward the end of cooking, I brushed the chicken with olive oil to help the skin crisp and brown. Once it was cooked through and the skin was where I wanted it, I brushed it with Jim ’N Nick’s Alabama White Sauce.

It wasn't the smoked chicken I planned when the day started, but it turned into exactly the kind of recipe Wreck the Kitchen is about: use what you've got, change the plan when you have to, and still put something good on the table.

Oven-Baked Alabama White Sauce Chicken

Ingredients

Directions

  1. Preheat the oven to 400°F.
  2. Pat the chicken dry and season generously on all sides with Kinder’s The Blend.
  3. Arrange the chicken skin-side up on a rimmed baking sheet or roasting pan.
  4. Bake until the chicken is nearly cooked through and the skin has begun to brown.
  5. Brush the skin lightly with olive oil and return the chicken to the oven to help it crisp.
  6. Continue cooking until the chicken reaches a safe internal temperature of at least 165°F in the thickest part without touching bone. Dark meat can be cooked beyond 165°F for a more tender texture.
  7. Remove from the oven and brush the hot chicken with Jim ’N Nick’s Alabama White Sauce. Serve additional sauce at the table.

This Labor Day dinner definitely didn’t go according to plan. I had chicken quarters and thighs ready to go, and the idea was simple: smoke the chicken low and slow, then finish it with Alabama white sauce. But when I went outside to get started, I discovered the electric smoker needed a good cleaning before I could use it.

Plan B was easy enough—or so I thought. I grabbed a smoking tube and figured I’d use the grill instead. That plan lasted until I discovered the grill had been left on and the propane tank was empty.

By then it was already mid-afternoon, the chicken still needed to be cooked, and there wasn’t much time left to back up and punt. So Plan C became the oven.

I seasoned the chicken generously with Kinder’s The Blend and baked it until it was nearly done. Toward the end, I brushed the skin with olive oil and put it back in the oven to get it browned and crispy. Once the chicken was finished, I brushed it with Jim ’N Nick’s Alabama White Sauce and served more sauce alongside it.

It wasn’t the smoked Labor Day chicken I had planned, but it turned out to be one of those accidental recipes worth making again. And that’s pretty much the spirit of Wreck the Kitchen: plans change, something goes wrong, you use what you have, and sometimes Plan C turns out pretty darn good.

Ingredients

  • 4 chicken leg quarters
  • Kinder’s The Blend seasoning, enough to generously season all sides

Directions

  1. Preheat the oven to 400°F.
  2. Pat the chicken dry with paper towels and season generously on all sides with Kinder’s The Blend.
  3. Arrange the chicken skin-side up on a rimmed baking sheet or roasting pan.
  4. Bake until the chicken is nearly cooked through and the skin has begun to brown.
  5. Brush the chicken skin lightly with olive oil and return it to the oven to help the skin brown and crisp
  6. Continue baking until the thickest part of the chicken reaches at least 165°F without the thermometer touching the bone.

Alabama White Sauce Finish

  1. Remove the chicken from the oven and brush the hot chicken with Jim ’N Nick’s Alabama White Sauce.
  2. Let the chicken rest for about 5 minutes.
  3. Serve with additional Alabama white sauce at the table.
